The Paleo Roadshow hasn’t traveled much in recent years.

But when the opportunity came to support James Sprague at his inaugural Mode Classic in Liberty Lake, Washington, we signed o00n the line.

It was an adventure to say the least.

A good reminder that the joy is in the journey, not the destination.
Happiness isn't found at the top of the hill, it's found in how you push.

Our task was simple:
Feed 200 people on Friday night.

So we did.

We brought back the Sweet Potaco menu from the Paleo Nick’s booth at the 2017 CrossFit Games:

  • Organic Sweet Potatoes
  • Chicken Tinga
  • Beef Barbacoa
  • Pork Carnitas

All shredded and juicy, topped with pineapple mango salsa, roasted tomatillo salsa, and a big pan of guacamole. We finished the buffet with pickled carrots, cucumbers, and jalapeños - because a little acidic crunch makes everything better.

In addition to dinner, we served hot food to athletes and spectators all weekend.

We also brought out the chipper ice cream sandwiches—not because that’s who we are, but because we believe in earning your ice cream. Every athlete got one at the end. Mission accomplished.

One of my favorite moments was seeing a photo from our 2018 CrossFit Games booth - James, eight years younger, riding for meals.

Now here he was in 2026: CrossFit Games Champion, husband, mediocre short-game golfer, and host of his own event.

Incredible to witness that kind of growth and to know you’ve fueled it.

After 12 years, we’re still feeding the people.
Still pouring ourselves out.
Still showing up when it’s hard.

Delayed pallets. Long days. Tired bodies.
We got the job done.

This one’s in the books.
And after all, memories are what we keep.

When I look back, I don’t remember the sleepless nights, the hard work, or the money spent.
I choose to remember the good and I encourage you to do the same.

Until next time…

“Keep It Paleo!” and “Earn Your Ice Cream.” (A tough balance, but you can do it!)

Great job, James. I’m proud to call you my friend.

We’re sharper now.

Your pal always,

Paleo Nick

PS: All brisket meals are back in stock if you’ve been waiting.
