We smoke the beef and pork low and slow, and we smoke the vegetables for our salsas. Chicken gets salsa roja, beef gets salsa verde, and pork gets our house tomatillo sauce. Everything is wrapped in a flour tortilla and frozen right after it’s made, so it tastes the same as the day we cooked it.
