Our smokers got us shut down by a public school.

Hey,
Today we got the green light.
3 and a half years of battles, planning commissions, rejection letters, and one truly absurd moment where our smokers were classified as outdoor manufacturing within 300 feet of a public school.
(We make food, people. Relax.)
But we persevered. And this week... PERMITTED.
So let me show you what we've been cooking up. Literally.
Meet our new mobile commercial kitchen. Brand new. Owned outright. No landlord. No shared space. No outside hands in our business. Just Ice Age, operating on our own terms.
Inside: 3 stock pot burners, charbroiler, griddle, 6-burner range, convection oven, steamer, dishwasher, full hood system. What does that mean for you? More menu. More flavor. More fire.
Think grilled proteins. Griddle items. Burritos. Things we've never been able to do before... COMING SOON!
But here's the part that gets me fired up.
This is the interim solution.
The smart one.
Because THIS is what we look at every single day:
That rendering lives on the door to our freezer. We see it every morning. Every afternoon. Every time we're pushing through a hard day.
A $3,000,000 purpose-built production facility. The kitchen of all kitchens. The deposit is already paid. The plans are drawn.
The dream is no longer just a dream, it's a blueprint.
When that building goes up, we won't just be feeding our loyal crew of Ice Age diehards. We'll be feeding the masses. Changing the food landscape. Proving once and for all that frozen doesn't mean compromised, it means perfected.
12 years in, we're just getting started.
Your Pal,
Paleo Nick
