BUT, ever wonder why the abundant Mexican styles of our meals?

From pork carnitas and grass-fed barbacoa to chorizo and eggs, Ice Age Meals is heavily influenced by Mexican flavors.
Well, Nick will tell you that he may be Norwegian, but he's Mexican at heart.
 

And just like Rick Bayless, he's adamant that Mexican cuisine is at the forefront of the world's culinary offerings.

Sure, Italian food is amazing and Thai is tough to beat, but at the end of the day, the flavors of Mexico are vast and supreme.

Just look at this food! Who could turn down a dish like this? 

And then there's the fact that most of the culinary ninjas in our kitchen hail from Mexico, Central and South America.

We're just adding a Paleo twist to the foods they've eaten their entire lives.

Consider this, too. If you look at the fast and casual food sector, how many of these places are Italian, French or Thai?

Almost none.

Now consider the Mexican places. You've got Chipotle, Q-Doba, Baja Fresh, Cafe Rio and El Pollo Loco, just to name a few.

While you can't accuse them of offering authentic Mexican food, they're all influenced by Mexican cuisine, just like our new meals (and one or two of our old ones).

The difference is that our food is a few steps closer to Chihuahua if you know what we're saying.

So here's the big takeaway. 

First, Mexican food is awesome. And two, if Mexican isn't your thing, we recommend the following:

1. First, put two fingers on the right side of your neck and check for a pulse.
